Ingredients

  • 1 1/2 pounds veal cutlets, pounded thin
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, sliced

Instructions

  1. Season veal cutlets with salt and pepper
  2. Dredge in flour, shaking off excess
  3. Heat 2 tablespoons butter and olive oil in large skillet
  4. Cook veal for 2-3 minutes per side until golden
  5. Remove veal and set aside
  6. Add wine to skillet and simmer for 2 minutes
  7. Add lemon juice and capers
  8. Whisk in remaining butter
  9. Return veal to skillet and heat through
  10. Garnish with parsley and lemon slices
  11. Serve immediately
