  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon purple food coloring (optional)
  • 1/2 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon ube extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans
  2. In a medium bowl, whisk together flour, baking powder, and salt
  3. In a large bowl, beat ube halaya, ube extract, sugar, and oil until smooth
  4. Add eggs one at a time, beating well after each addition
  5. Mix in coconut milk and vanilla extract
  6. Gradually add flour mixture, mixing until just combined
  7. Add purple food coloring if desired for deeper color
  8. Divide batter between prepared pans
  9. Bake for 30-35 minutes until toothpick inserted comes out clean
  10. Cool in pans for 10 minutes, then remove to wire racks
  11. For frosting, beat butter until creamy, then gradually add powdered sugar
