Ingredients

  • 4 large russet potatoes
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 cup vegetable oil
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Peel potatoes and cut into chunks.
  3. Place in a large pot of salted water and bring to a boil.
  4. Cook for 8-10 minutes until tender but not mushy.
  5. Drain and let cool completely.
  6. Grate potatoes using a box grater.
  7. In a large bowl, combine grated potatoes with flour, salt, pepper, garlic powder, onion powder, and paprika.
  8. Mix until well combined.
  9. Shape mixture into small cylinders about 1 inch long.
  10. Place on prepared baking sheet and brush with vegetable oil.
  11. Bake for 20-25 minutes until golden brown and crispy.
  12. Remove from oven and sprinkle with Parmesan cheese and parsley.
