Ingredients

  • 4 striped bass fillets (6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup white wine
  • 2 tablespoons capers
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Pat fish fillets dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add fillets skin-side up and cook for 4-5 minutes until golden brown.
  4. Flip and cook for 3-4 minutes until fish flakes easily.
  5. Remove fillets and set aside.
  6. Add butter, garlic, and dill to the same pan.
  7. Cook for 1 minute until fragrant.
  8. Add white wine and lemon juice, bring to a simmer.
  9. Add capers and cook for 1 minute.
  10. Return fillets to pan and spoon sauce over them.
  11. Garnish with parsley and serve immediately.
