Instructions

  1. In a large bowl, combine strawberries and sugar
  2. Let stand for 30 minutes to draw out juices
  3. In a small bowl, whisk together cornstarch and water
  4. Transfer strawberries and their juices to a large saucepan
  5. Add lemon juice and salt, bring to a boil
  6. Gradually add cornstarch mixture, stirring constantly
  7. Cook for 2-3 minutes until thickened and clear
  8. Remove from heat and stir in vanilla extract and butter
  9. Let cool completely before using
