Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup shredded cheese
  • 1/4 cup sour cream
  • 1 lime, cut into wedges

Instructions

  1. In a medium saucepan, bring quinoa and vegetable broth to a boil.
  2. Reduce heat, cover, and simmer for 15 minutes until quinoa is tender.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion and cook until softened, about 5 minutes.
  5. Add garlic, bell pepper, and jalapeño, cooking for 3 minutes.
