
Shabu Shabu Recipe
Ingredients
- 1 pound thinly sliced beef
- 1/2 head napa cabbage, chopped
- 1 bunch spinach, trimmed
- 1 package enoki mushrooms
- 1 package shiitake mushrooms
- 1 block tofu, cut into cubes
- 1 bunch green onions, cut into 2-inch pieces
- 1 carrot, sliced
- 1 daikon radish, sliced
- 8 cups dashi stock
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sugar
- 1 teaspoon salt
- Ponzu sauce for dipping
- Goma sauce for dipping
Instructions
- Prepare all vegetables and arrange on platters
- In a large pot, combine dashi stock, soy sauce, mirin, sugar, and salt
- Bring to a boil and reduce heat to simmer
- Place pot in the center of the table
- Each person cooks their own ingredients in the hot broth
- Dip meat and vegetables briefly in the broth
- Cook until just done, about 30 seconds to 2 minutes
- Dip cooked items in ponzu or goma sauce
- Continue cooking and eating until all ingredients are used
- Serve the remaining broth as soup at the end
