Ingredients

  • 1 lb crabmeat, picked over for shells
  • 1 lb shrimp, peeled and deveined
  • 1/2 lb scallops, chopped
  • 8 cups day-old bread, cubed
  • 1/2 cup butter
  • 2 large onions, chopped
  • 4 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh thyme, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 3 large eggs, beaten
  • 2 cups seafood stock
  • 1/2 cup heavy cream
  • 1/4 cup dry white wine

Instructions

  1. Preheat oven to 350°F and grease a large baking dish.
  2. Spread bread cubes on a baking sheet and toast in oven for 10 minutes until lightly golden. Set aside.
  3. In a large skillet, melt butter over medium heat.
  4. Add onions, celery, and bell pepper. Cook until softened, about 8-10 minutes.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Add parsley, thyme, salt, pepper, cayenne, paprika, oregano, and basil. Cook for 2 minutes.
  7. In a large bowl, combine toasted bread cubes with the vegetable mixture.
  8. Add crabmeat, shrimp, and scallops to the bread mixture.
  9. In a separate bowl, whisk together eggs, seafood stock, cream, and white wine.
  10. Pour liquid mixture over bread and seafood mixture. Toss gently to combine.
  11. Transfer to prepared baking dish and cover with foil.
  12. Bake for 30 minutes, then remove foil and bake for 15 more minutes until golden brown on top.
  13. Let rest for 10 minutes before serving.
