Ingredients

  • 2 packages ramen noodles (any flavor)
  • 1/2 head cabbage, shredded
  • 1/2 head red cabbage, shredded
  • 1 bunch green onions, sliced
  • 1/2 cup sliced almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/2 cup vegetable oil
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 package ramen seasoning (from one of the noodle packages)

Instructions

  1. Break ramen noodles into small pieces and place in a large bowl.
  2. Add shredded cabbage, red cabbage, and green onions to the bowl.
  3. In a small skillet, toast almonds and sunflower seeds until lightly golden, about 3-4 minutes. Set aside to cool.
  4. In a small bowl, whisk together vegetable oil, vinegar, sugar, soy sauce, sesame oil, salt, pepper, and ramen seasoning packet.
  5. Add toasted almonds, sunflower seeds, and dried cranberries to the salad.
  6. Pour dressing over the salad and toss well to combine.
  7. Cover and refrigerate for at least 2 hours before serving.
  8. Toss again before serving to redistribute the dressing.
