Special Notes

This classic Chinese-American dish is perfect for a quick weeknight dinner. The key to great lo mein is cooking everything quickly over high heat to maintain the vegetables' crispness. Feel free to substitute your favorite vegetables or add mushrooms for extra umami flavor. The sauce can be made ahead of time and stored in the refrigerator for up to a week.
