Ingredients

  • 2 cups shredded cabbage
  • 1 cup julienned carrots
  • 1/2 cup julienned bell peppers (mixed colors)
  • 1/4 cup thinly sliced red onion
  • 2-3 scotch bonnet peppers, thinly sliced
  • 1/4 cup white vinegar
  • 1/4 cup apple cider vinegar
  • 2 tbsp lime juice
  • 1 tbsp salt
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1/2 tsp allspice
  • 1/4 tsp ground cloves
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves

Instructions

  1. In a large bowl, combine cabbage, carrots, bell peppers, red onion, and scotch bonnet peppers.
  2. In a separate bowl, whisk together white vinegar, apple cider vinegar, lime juice, salt, sugar, black pepper, allspice, and ground cloves.
  3. Add minced garlic and thyme leaves to the vinegar mixture.
  4. Pour the vinegar mixture over the vegetables and toss well to combine.
  5. Pack the mixture tightly into a clean glass jar or container.
  6. Press down to ensure vegetables are submerged in the liquid.
  7. Cover and refrigerate for at least 24 hours before serving.
  8. Store in refrigerator for up to 2 weeks.
