Ingredients

  • 2 pounds large shrimp, peeled and deveined
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon mustard seeds
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/4 cup fresh dill, chopped

Instructions

  1. Bring a large pot of salted water to boil.
  2. Add shrimp and cook for 2-3 minutes until pink and cooked through.
  3. Drain and immediately transfer to ice water to stop cooking.
  4. In a medium saucepan, combine vinegar, sugar, olive oil, lemon juice, salt, black pepper, red pepper flakes, celery seeds, and mustard seeds.
  5. Bring to a boil and cook for 2 minutes.
  6. Remove from heat and let cool slightly.
  7. In a large bowl, combine cooked shrimp, sliced onion, minced garlic, and bay leaf.
  8. Pour the warm vinegar mixture over the shrimp.
  9. Add fresh dill and toss to combine.
  10. Cover and refrigerate for at least 4 hours, stirring occasionally.
  11. Serve chilled as an appetizer or over salad.
