
Pickled Okra Recipe
Ingredients
- 1 pound fresh okra
- 2 cups white vinegar
- 2 cups water
- 1/4 cup salt
- 2 tablespoons sugar
- 4 cloves garlic, minced
- 2 teaspoons dill seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon red pepper flakes
- 4 bay leaves
Instructions
- Wash okra and trim stems.
- In a large pot, combine vinegar, water, salt, and sugar.
- Bring to a boil and stir until salt and sugar dissolve.
- Pack okra into 2 clean pint jars.
- Add garlic, dill seeds, mustard seeds, red pepper flakes, and bay leaves to each jar.
- Pour hot brine over okra, leaving 1/2 inch headspace.
- Remove air bubbles and wipe rims.
- Seal jars and process in boiling water for 10 minutes.
- Let cool and store in a cool, dark place for at least 2 weeks before eating.
