Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup water
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • 1/2 teaspoon baking soda

Instructions

  1. Line a baking sheet with parchment paper and set aside
  2. In a large heavy saucepan, combine both sugars, cream, water, butter, and salt
  3. Cook over medium heat, stirring constantly, until sugar dissolves
  4. Bring to a boil and cook without stirring until mixture reaches 240°F on a candy thermometer
  5. Remove from heat and quickly stir in vanilla extract and baking soda
  6. Immediately add pecans and stir until well coated
  7. Working quickly, drop spoonfuls of the mixture onto prepared parchment paper
  8. Let cool completely until firm, about 30 minutes
  9. Store in an airtight container at room temperature for up to 2 weeks
