
Peach Jelly Recipe
Ingredients
- 3 pounds ripe peaches, pitted and chopped
- 1/4 cup water
- 1 package powdered pectin
- 4 cups granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon butter (optional)
Instructions
- Place chopped peaches and water in a large pot
- Bring to a boil and simmer for 20 minutes until very soft
- Strain through a fine mesh sieve or cheesecloth to extract juice
- Measure 3 1/2 cups peach juice
- Return juice to pot and add pectin
- Bring to a rolling boil, stirring constantly
- Add sugar all at once and return to rolling boil
- Boil for 1 minute, stirring constantly
- Remove from heat and skim off any foam
- Add lemon juice and butter if using
- Ladle hot jelly into sterilized jars
- Process in boiling water bath for 10 minutes
