Ingredients

  • 2 large sweet onions
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 cup panko breadcrumbs
  • 1/2 cup cornmeal
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Slice onions into 1/2-inch thick rings and separate.
  2. Set up three bowls: flour in first, buttermilk in second, and breadcrumbs mixed with cornmeal, garlic powder, paprika, cayenne, salt, and pepper in third.
  3. Dredge onion rings in flour, then buttermilk, then breadcrumb mixture.
  4. Place on a wire rack and let rest for 10 minutes.
  5. Heat 2 inches of oil in a large pot to 375°F (190°C).
  6. Fry onion rings in batches for 2-3 minutes until golden brown.
  7. Drain on paper towels.
  8. Season with additional salt if needed.
  9. Serve immediately with your favorite dipping sauce.
