Ingredients

  • 2 cups short-grain rice
  • 2 1/4 cups water
  • 1 can (12 oz) Spam
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons mirin
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon salt
  • 4 sheets nori seaweed
  • 1 tablespoon sesame seeds

Instructions

  1. Rinse rice until water runs clear, drain.
  2. Cook rice with water in a rice cooker or on stovetop.
  3. While rice cooks, slice Spam into 8 equal pieces.
  4. In a small bowl, mix soy sauce, sugar, and mirin.
  5. Heat a large skillet over medium-high heat.
  6. Cook Spam slices for 2-3 minutes per side until golden.
  7. Add sauce mixture and cook for 1 minute, turning to coat.
  8. Remove from heat and set aside.
  9. Mix cooked rice with vinegar and salt.
  10. Cut nori sheets in half lengthwise.
  11. Using a musubi mold or your hands, form rice into rectangles.
  12. Top each rice rectangle with a Spam slice.
  13. Wrap with nori strip, moistening edge to seal.
  14. Sprinkle with sesame seeds and serve.
