Ingredients
- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise

- 1/2 cup queso fresco, crumbled

Instructions
- Preheat oven to 375°F
- In a large bowl, combine corn, mayonnaise, and sour cream
- Add queso fresco, cotija cheese, jalapeño, and red onion
- Stir in cilantro, lime juice, and all seasonings
- Mix well until all ingredients are combined
- Transfer to a baking dish
- Bake for 20 minutes until hot and bubbly
- Remove from oven and let cool slightly
- Garnish with additional cilantro and cheese
- Serve warm with tortilla chips
