Ingredients

  • 2 cups basmati rice
  • 3 cups chicken broth
  • 1/4 cup olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup kalamata olives, pitted and chopped
  • 1/4 cup capers
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Rinse rice until water runs clear, drain.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion and cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Add rice and stir to coat with oil.
  6. Add chicken broth, salt, pepper, and oregano.
  7. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  8. Remove from heat and let stand for 5 minutes.
  9. Fluff with a fork and add sun-dried tomatoes, olives, capers, parsley, and mint.
  10. Season with red pepper flakes and serve.
