Ingredients
- 2 cups basmati rice
- 3 cups chicken broth
- 1/4 cup olive oil
- 1 large onion, diced
- 4 cloves garlic, minced

Instructions
- Rinse rice until water runs clear, drain.

- Add chicken broth, salt, pepper, and oregano.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Remove from heat and let stand for 5 minutes.
- Fluff with a fork and add sun-dried tomatoes, olives, capers, parsley, and mint.
- Season with red pepper flakes and serve.
