Ingredients
- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 pound lobster meat, cooked and chopped

- 1 egg yolk
- 2 tablespoons fresh chives, chopped

- 1/2 cup heavy cream
Instructions
- Make pasta dough by combining flour, eggs, salt, and olive oil
- Knead until smooth, wrap in plastic, and rest for 30 minutes
- For filling, mix lobster, ricotta, Parmesan, egg yolk, chives, salt, pepper, and nutmeg
- Roll pasta into thin sheets
- Place small mounds of filling on one sheet
- Cover with another sheet and seal edges
- Cut into ravioli shapes
- Boil ravioli in salted water for 3-4 minutes
- For sauce, melt butter in a pan
- Add white wine and reduce by half
- Add heavy cream and simmer until thickened
- Toss ravioli with sauce and serve
