Ingredients

  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 large onion, grated
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground sumac
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground saffron
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup vegetable oil
  • 1/4 cup yogurt
  • 1/4 cup lemon juice
  • 1/4 cup fresh herbs for garnish

Instructions

  1. In a large bowl, combine ground lamb and beef.
  2. Add grated onion, garlic, salt, pepper, sumac, turmeric, and saffron.
  3. Mix until well combined.
  4. Add fresh mint, parsley, and cilantro.
  5. Mix until herbs are evenly distributed.
  6. Cover and refrigerate for at least 1 hour.
  7. Shape meat mixture into long, thin cylinders around skewers.
  8. Heat oil in a large grill pan over medium-high heat.
  9. Cook koobideh for 6-8 minutes per side until golden brown and cooked through.
  10. Remove from heat and let rest for 5 minutes.
  11. Serve with yogurt sauce and fresh herbs.
