
Kanji Recipe
Ingredients
- 1 cup rice
- 4 cups water
- 1/2 cup yogurt
- 1/4 cup onions, finely chopped
- 2 green chilies, chopped
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon ghee or oil
Instructions
- Rinse rice until water runs clear
- In a large pot, bring water to a boil
- Add rice and cook for 15-20 minutes until soft
- Mash rice slightly to create a porridge-like consistency
- In a small pan, heat ghee over medium heat
- Add cumin seeds and let them sizzle
- Add onions, green chilies, ginger, and garlic
- Cook until onions are soft and fragrant
- Add turmeric powder and mix well
- Add this mixture to the rice porridge
- Stir in yogurt, salt, and black pepper
- Garnish with fresh cilantro and serve hot
