Ingredients
- 4 cups dashi stock
- 1/4 cup soy sauce
- 2 tablespoons mirin
- 1 tablespoon sake
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 cup mushrooms, sliced
- 1/4 cup green onions, chopped
- 1/4 cup tofu, cubed
- 1/4 cup spinach leaves
- 1/4 cup seaweed
- 1/2 teaspoon ginger, grated
Instructions
- In a pot, bring dashi stock to a boil
- Add soy sauce, mirin, sake, salt, and sugar
- Reduce heat and simmer for 10 minutes
- Add mushrooms and cook for 5 minutes
- Add green onions, tofu, spinach, and seaweed
- Simmer for 5 more minutes
- Add ginger and remove from heat
- Serve hot
