  • 1/2 cup red kidney beans

  • 2 celery stalks, diced
  • 1 sweet potato, diced
  • 1/2 cup coconut milk
  • 1/4 cup fresh thyme
  • 1/4 cup fresh parsley
  • 2 bay leaves
  • 1 scotch bonnet pepper
  • 1 tablespoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 8 cups chicken broth

Instructions

  1. Soak split peas and kidney beans in water for 2 hours, then drain.
  2. In a large pot, combine chicken, soaked beans, onion, garlic, and ginger.
  3. Add carrots, celery, sweet potato, and chicken broth.
  4. Bring to a boil and simmer for 1 hour.
