Ingredients

  • 2 cups vanilla ice cream, softened
  • 1 1/2 cups self-rising flour
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips
  • 1/4 cup chopped nuts
  • 1 tablespoon butter, melted

Instructions

  1. Preheat oven to 350°F and grease a 9x5 inch loaf pan.
  2. In a large bowl, combine softened ice cream and self-rising flour.
  3. Mix until just combined - do not overmix.
  4. Add sugar, vanilla extract, and salt, stirring gently.
  5. Fold in chocolate chips and chopped nuts.
  6. Pour the batter into the prepared loaf pan.
  7. Drizzle melted butter over the top of the batter.
  8. Bake for 40-45 minutes until golden brown and a toothpick inserted in center comes out clean.
  9. Remove from oven and let cool in pan for 10 minutes.
  10. Turn out onto a wire rack to cool completely before slicing.
