Japanese Gyudon Recipe

Ingredients

  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 1 large onion, sliced
  • 2 cups dashi stock
  • 1/4 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 1 teaspoon grated ginger
  • 4 large eggs
  • 4 cups cooked Japanese short-grain rice
  • 2 green onions, sliced
  • Pickled ginger for serving

Instructions

  1. In a large skillet, combine dashi stock, soy sauce, mirin, sake, and sugar.
  2. Bring to a boil over medium-high heat.
  3. Add sliced onion and cook for 3-4 minutes until softened.
  4. Add beef slices and cook for 2-3 minutes until just cooked through.
  5. Add grated ginger and simmer for 2 minutes.
  6. In a separate pan, cook eggs sunny-side up or poached.
  7. Divide rice among 4 bowls.
  8. Top with beef and onion mixture.
  9. Place an egg on top of each bowl.
  10. Garnish with green onions and serve with pickled ginger.
