Ingredients

  • 1 pound dried great northern beans
  • 1/2 pound ham hock or bacon
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 6 cups chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Soak beans overnight in water, then drain.
  2. In a large pot, cook ham hock or bacon until browned.
  3. Add onion and garlic, cook until softened, about 5 minutes.
  4. Add beans, bay leaves, salt, pepper, paprika, and cayenne.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat and simmer for 1 1/2 to 2 hours until beans are tender.
  7. Remove bay leaves and ham hock.
  8. Shred any meat from ham hock and return to pot.
  9. Taste and adjust seasonings if needed.
  10. Garnish with fresh parsley before serving.
