Special Notes

This gluten-free gnocchi recipe creates light, pillowy dumplings that are perfect for those following a gluten-free diet. The combination of gluten-free flour and potato starch creates the right texture and consistency. The key is to not overmix the dough and to handle it gently to prevent the gnocchi from becoming tough. These gnocchi can be served with any sauce, from simple butter and sage to rich tomato sauce. They can also be frozen for later use - just freeze on a baking sheet before transferring to a freezer bag. The gnocchi are best served immediately after cooking.
