Ingredients

Instructions
- Preheat oven to 375°F and line baking sheets with parchment paper.
- In a large bowl, cream together butter and both sugars until light and fluffy.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together gluten-free flour, baking soda, salt, and xanthan gum.
- Gradually add dry ingredients to butter mixture and mix until combined.
- Fold in chocolate chips and nuts if using.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes until edges are golden brown.
- Remove from oven and let cool on baking sheets for 5 minutes.
- Transfer to wire racks to cool completely.
