Homemade Egg Noodles Recipe

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour for dusting

Instructions

  1. In a large bowl, make a well in the center of the flour.
  2. Add eggs, salt, and olive oil to the well.
  3. Mix with a fork until a rough dough forms.
  4. Turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  5. Cover with a damp towel and let rest for 30 minutes.
  6. Divide dough into 4 equal pieces.
  7. Roll each piece very thin, about 1/8 inch thick.
  8. Cut into desired noodle width (fettuccine, linguine, etc.).
  9. Dust with flour to prevent sticking.
  10. Bring a large pot of salted water to a boil.
  11. Cook noodles for 3-5 minutes until al dente.
  12. Drain and serve immediately.

Special Notes

These homemade egg noodles are incredibly tender and flavorful. The key is to knead the dough until it's smooth and elastic, and to roll it very thin. The eggs give the noodles a rich, yellow color and tender texture. They're perfect for soups, stews, or any pasta dish. Fresh noodles cook much faster than dried ones.
