
Classic Dirty Rice Recipe
Ingredients
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 pound ground pork
- 1/2 pound chicken livers, chopped
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 2 green onions, sliced
Instructions
- Rinse rice until water runs clear, drain and set aside.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add ground pork and chicken livers, cook until browned, about 8 minutes.
- Add onion, bell pepper, and celery, cook until softened, about 5 minutes.
- Add garlic, bay leaves, thyme, oregano, cayenne, black pepper, and salt.
- Stir in rice and cook for 2 minutes.
- Add chicken broth and bring to a boil.
- Reduce heat to low, cover and simmer for 20 minutes.
- Remove from heat and let stand for 5 minutes.
- Fluff with fork and garnish with green onions.

This traditional Louisiana dirty rice gets its name from the dark color from the chicken livers and seasonings. It's a hearty side dish that pairs perfectly with grilled meats or seafood. The key is to cook the rice slowly so it absorbs all the flavorful liquid.
