Special Notes

This classic French vinaigrette is incredibly versatile and can be used on green salads, roasted vegetables, or as a marinade for chicken or fish. The key to a good vinaigrette is creating a stable emulsion by slowly adding the oil while whisking. If the dressing separates, simply whisk it again before serving. For a smoother texture, you can blend all ingredients in a food processor or blender. The honey adds a subtle sweetness that balances the tangy mustard and vinegar.
