Ingredients

  • 2 cups pitted dates
  • 2 cups water
  • 1/4 cup lemon juice
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Place dates in a medium saucepan and cover with water.
  2. Bring to a boil, then reduce heat and simmer for 15 minutes until dates are very soft.
  3. Remove from heat and let cool for 10 minutes.
  4. Transfer dates and cooking liquid to a blender or food processor.
  5. Add lemon juice, vanilla extract, and salt.
  6. Blend on high speed until completely smooth, about 2-3 minutes.
  7. Strain through a fine-mesh sieve to remove any remaining pulp.
  8. Return to saucepan and simmer over low heat for 5-10 minutes until thickened to desired consistency.
  9. Let cool completely before storing.
  10. Store in an airtight container in the refrigerator for up to 2 weeks.
