Ingredients

  • 6 pav buns or dinner rolls
  • 2 cups potatoes, boiled and mashed
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 cup onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons dabeli masala
  • 1 tablespoon tamarind paste
  • 1 tablespoon jaggery
  • 1/4 cup pomegranate seeds
  • 1/4 cup sev (chickpea noodles)
  • 1/4 cup roasted peanuts
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. Heat oil in a large pan over medium heat
  2. Add cumin seeds and let them sizzle
  3. Add onions and cook until golden brown
  4. Add garlic and ginger, cook for 1 minute
  5. Add dabeli masala and cook for 30 seconds
  6. Add mashed potatoes and mix well
  7. Add tamarind paste, jaggery, and salt
  8. Cook for 5 minutes until well combined
  9. Slice pav buns horizontally
  10. Spread butter on both sides
  11. Fill with potato mixture
  12. Top with pomegranate seeds, sev, peanuts, and cilantro
  13. Serve immediately
