  • 1 lb crabmeat, picked over for shells

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, chopped
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs for coating
  • Oil for frying

Instructions

  1. In a large bowl, combine crabmeat, breadcrumbs, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, pepper, cayenne, parsley, and green onions.
  2. Mix until well combined.

  4. Place flour, beaten eggs, and breadcrumbs in separate shallow dishes.
  5. Dredge each ball in flour, then dip in beaten eggs, then coat with breadcrumbs.
  6. Heat oil in a large skillet to 350°F.
  7. Fry crab balls in batches for 3-4 minutes until golden brown and cooked through.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Serve immediately with cocktail sauce or tartar sauce.
