Ingredients

Instructions
- In a small bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- In a large bowl, combine cottage cheese, yeast mixture, flour, and salt.
- Mix until a rough dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
- Punch down dough and divide into 8 equal pieces.
- Shape each piece into a ball, then poke a hole in the center and stretch to form a bagel shape.
- Place bagels on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
- Preheat oven to 425°F and bring water and baking soda to a boil in a large pot.
- Boil bagels for 1 minute per side, then place back on baking sheet.
- Brush with beaten egg and sprinkle with everything bagel seasoning.
- Bake for 15-20 minutes until golden brown.
- Cool on wire rack before serving.
