Ingredients

  • 1 cup cottage cheese
  • 1/4 cup warm water
  • 2 1/4 tsp active dry yeast
  • 1 tbsp sugar
  • 3 cups bread flour
  • 1 tsp salt
  • 1 egg, beaten
  • 2 tbsp everything bagel seasoning
  • 1 tbsp baking soda
  • 8 cups water

Instructions

  1. In a small bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. In a large bowl, combine cottage cheese, yeast mixture, flour, and salt.
  3. Mix until a rough dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
  5. Punch down dough and divide into 8 equal pieces.
  6. Shape each piece into a ball, then poke a hole in the center and stretch to form a bagel shape.
  7. Place bagels on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  8. Preheat oven to 425°F and bring water and baking soda to a boil in a large pot.
  9. Boil bagels for 1 minute per side, then place back on baking sheet.
  10. Brush with beaten egg and sprinkle with everything bagel seasoning.
  11. Bake for 15-20 minutes until golden brown.
  12. Cool on wire rack before serving.
