
Corn Nuggets Recipe
Ingredients
- 2 cups corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup grated Parmesan cheese
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 2 large eggs
- 1/4 cup milk
- 1/4 cup chopped green onions
- 2 tbsp butter, melted
- Oil for frying
Instructions
- If using frozen corn, thaw and drain well. If using fresh corn, cook briefly and drain.
- In a large bowl, combine flour, cornmeal, Parmesan cheese, baking powder, salt, pepper, garlic powder, and onion powder.
- In a separate bowl, whisk together eggs, milk, and melted butter.
- Add wet ingredients to dry ingredients and mix until just combined.
- Fold in corn kernels and green onions.
- Heat oil in a deep skillet or fryer to 350°F.
- Drop rounded tablespoons of batter into hot oil.
- Fry for 2-3 minutes until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
- Serve immediately while hot.
Special Notes
These crispy corn nuggets are perfect as an appetizer or side dish. They're similar to hush puppies but with a corn-forward flavor. The key is to not overmix the batter - lumps are okay and will create a better texture. Serve with ranch dressing, honey mustard, or your favorite dipping sauce. For a healthier version, you can bake them at 400°F for 15-20 minutes instead of frying.
