Ingredients
- 1 pound fresh conch, cleaned and diced
- 1/2 cup lime juice
- 1/4 cup orange juice
- 2 tablespoons white vinegar
- 1/2 red onion, thinly sliced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 jalapeño pepper, minced

- 1/4 teaspoon cayenne pepper
Instructions
- In a large bowl, combine lime juice, orange juice, and vinegar
- Add diced conch and marinate for 10 minutes
- Add red onion, bell peppers, cucumber, and tomatoes
- Stir in jalapeño pepper, cilantro, and parsley
- Season with salt, black pepper, and cayenne pepper
- Toss everything together gently
- Refrigerate for at least 30 minutes to allow flavors to meld
- Serve chilled as an appetizer or light meal
