Special Notes

Chokecherry pudding is a traditional American dessert that showcases the unique flavor of wild chokecherries. These tart, astringent berries require sugar to balance their natural bitterness, but they create a complex, sophisticated flavor when properly prepared. The cornstarch thickens the pudding to the perfect consistency, while the spices add warmth and depth. This pudding is perfect for showcasing local, seasonal ingredients and can be served as a dessert or even for breakfast. The chokecherries can be fresh or frozen, and the pudding keeps well in the refrigerator for several days.
