
Chocolate Covered Cherries Recipe
Ingredients
- 24 maraschino cherries with stems
- 1/2 cup powdered sugar
- 2 tablespoons butter, softened
- 1 tablespoon light corn syrup
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon salt
- 12 ounces dark chocolate chips
- 2 tablespoons coconut oil
- 1/4 cup white chocolate chips (optional)
Instructions
- Drain maraschino cherries and pat dry with paper towels
- In a small bowl, mix powdered sugar, butter, corn syrup, vanilla extract, and salt
- Roll mixture into 24 small balls, about 1/2 teaspoon each
- Flatten each ball and wrap around a cherry, sealing completely
- Place wrapped cherries on a parchment-lined baking sheet
- Freeze for 30 minutes until firm
- Melt dark chocolate chips and coconut oil in a double boiler
- Dip each cherry into melted chocolate, coating completely
- Return to parchment-lined sheet and let set
- If desired, melt white chocolate and drizzle over cherries
- Refrigerate for 1 hour until chocolate is completely set
- Store in an airtight container in the refrigerator
