
Chicken Inasal Recipe
Ingredients
- 4 chicken leg quarters
- 1/2 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup calamansi juice
- 2 tablespoons brown sugar
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon annatto powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons oil
- 1/4 cup chicken fat or oil for basting
Instructions
- In a large bowl, combine soy sauce, vinegar, calamansi juice, and brown sugar
- Add garlic, ginger, annatto powder, salt, black pepper, and cayenne
- Mix well to create marinade
- Add chicken and marinate for at least 2 hours
- Preheat grill to medium-high heat
- Remove chicken from marinade and pat dry
- Brush with oil and place on grill
- Cook for 20-25 minutes, turning occasionally
- Baste with chicken fat or oil during cooking
- Cook until internal temperature reaches 165°F
- Let rest for 5 minutes before serving
