Ingredients

  • 1 lb boneless chicken breast, sliced thin
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 large onion, sliced
  • 2 celery stalks, sliced
  • 1 bell pepper, sliced
  • 1 cup bean sprouts
  • 1 cup sliced mushrooms
  • 1/2 cup sliced water chestnuts
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 1/2 cup chicken broth
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 2 green onions, sliced
  • Cooked rice for serving

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, chicken broth, sugar, and sesame oil. Set aside.
  2. Heat 1 tbsp oil in a large wok or skillet over high heat.
  3. Add chicken and cook for 3-4 minutes until golden brown. Remove and set aside.
  4. Add remaining oil to the wok and heat.
  5. Add garlic and ginger. Cook for 30 seconds until fragrant.
  6. Add onion, celery, and bell pepper. Stir-fry for 3-4 minutes.
  7. Add bean sprouts, mushrooms, and water chestnuts. Cook for 2-3 minutes.
  8. Return chicken to the wok and add the sauce mixture.
  9. Stir-fry for 2-3 minutes until sauce thickens and coats everything.
  10. Add green onions and toss to combine.
  11. Serve immediately over cooked rice.
