Ingredients

  • 2 pounds carrots, peeled and chopped
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 350°F and grease a 2-quart baking dish
  2. Boil carrots until very tender, about 15 minutes
  3. Drain and puree carrots in a food processor
  4. In a large bowl, combine carrot puree with melted butter
  5. Add sugar, eggs, flour, baking powder, vanilla, salt, cinnamon, and nutmeg
  6. Mix until well combined
  7. Pour mixture into prepared baking dish
  8. In a small bowl, mix brown sugar and pecans
  9. Sprinkle over the top of the soufflé
  10. Bake for 45 minutes until set and golden brown
  11. Let cool for 10 minutes before serving
