Special Notes

This caramel icing recipe creates a rich, creamy topping that's perfect for cakes, cupcakes, or cookies. The combination of brown sugar and cream creates a deep, complex caramel flavor that's both sweet and slightly salty. The key is to cook the brown sugar mixture long enough to develop the caramel flavor but not so long that it becomes bitter. This icing is perfect for fall desserts and pairs well with apple, pumpkin, or spice cakes. You can adjust the consistency by adding more or less milk. The icing will thicken as it cools, so use it while it's still warm and spreadable.
