Mediterranean Branzino Recipe

Ingredients

  • 4 whole branzino (1 lb each), cleaned
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 lemons, sliced
  • 1/4 cup fresh oregano, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup white wine
  • 2 tablespoons butter

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Score the fish on both sides with 3 diagonal cuts.
  3. In a small bowl, mix olive oil, garlic, oregano, parsley, salt, black pepper, and red pepper flakes.
  4. Rub the mixture all over the fish, inside and out.
  5. Stuff the cavity with lemon slices.
  6. Place fish on a baking sheet lined with parchment paper.
  7. Roast for 20-25 minutes until fish flakes easily.
  8. Remove from oven and let rest for 5 minutes.
  9. In a small saucepan, heat white wine and butter.
  10. Serve fish with the wine sauce and additional lemon wedges.
