
Bigos Recipe
Ingredients
- 2 pounds sauerkraut
- 1 pound fresh cabbage, shredded
- 1 pound pork shoulder, cubed
- 1/2 pound kielbasa, sliced
- 1/2 cup dried mushrooms
- 1 large onion, diced
- 4 cloves garlic, minced
- 1/2 cup red wine
- 1/4 cup tomato paste
- 2 bay leaves
- 1 teaspoon caraway seeds
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
Instructions
- Soak dried mushrooms in hot water for 30 minutes
- In a large pot, combine sauerkraut and fresh cabbage
- Add pork shoulder and kielbasa
- Add soaked mushrooms and their liquid
- Add onions, garlic, red wine, and tomato paste
- Season with bay leaves, caraway seeds, salt, black pepper, and paprika
- Bring to a boil, then reduce heat to simmer
- Cook for 2 hours, stirring occasionally
- Taste and adjust seasonings if needed
- Serve hot with bread or potatoes
