Ingredients

  • 6 slices bacon, chopped
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1 tablespoon butter (if needed)

Instructions

  1. Cook chopped bacon in a large skillet over medium heat until crispy
  2. Remove bacon with a slotted spoon and set aside, reserving drippings
  3. If you have less than 3 tablespoons of drippings, add butter to make 3 tablespoons
  4. Whisk flour into the bacon drippings and cook for 2 minutes, stirring constantly
  5. Gradually add milk, whisking constantly to prevent lumps
  6. Season with salt, black pepper, garlic powder, and onion powder
  7. Bring to a gentle boil, then reduce heat to low
  8. Simmer for 8-10 minutes, stirring frequently, until thickened
  9. Stir in reserved bacon pieces
  10. Taste and adjust seasoning if needed
  11. Serve hot over biscuits, mashed potatoes, or toast

Special Notes

This rich and smoky bacon gravy is a Southern comfort food classic. The key is using the bacon drippings as the fat base for the roux, which gives the gravy its distinctive flavor. For extra richness, you can use half-and-half instead of milk. This gravy is perfect for biscuits and gravy or as a topping for mashed potatoes. Leftovers can be stored in the refrigerator for up to 3 days.
