Ingredients

  • 1 pound andouille sausage, sliced
  • 1 pound chicken thighs, diced
  • 1 pound shrimp, peeled and deveined
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 3 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 tablespoon Creole seasoning
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, sliced

Instructions

  1. In a large Dutch oven, cook sausage until browned.
  2. Add chicken and cook until browned.
  3. Add onion, bell pepper, celery, and garlic.
  4. Cook until vegetables are tender, about 5 minutes.
  5. Add rice and stir to coat.
  6. Add broth, tomatoes, tomato paste, bay leaves, Creole seasoning, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 20 minutes.
  8. Add shrimp and cook for 5 minutes until pink.
  9. Remove bay leaves and stir in parsley and green onions.
  10. Serve immediately.
